I took George's class at the Morgantown Food Fest. In his class he taught technique after technique for successful cheescake baking. And he writes about all these techniques in this book. I like this book a lot, but, if someone is planning to make a cheesecake from one of the recipes it would be prudent to plan for doing so two or three days ahead of time.
