Book Reviews of 125 Best Vegetarian Slow Cooker Recipes

Book Review: Delicious and nutritious meals
Summary: 5 Stars

I've now tried about 10 of the recipes from this book and I have to say I have been very impressed. I decided to start adding more vegetarian meals into my and my partners diet. I would say over 80 percent of the meals were pretty good. I have found that it is more challenging to add a lot of flavor to vegetarian meals. The author gives quite a few good tips (for example, to toast the cumin seeds or to crush the pepercorns or how to properly poach an egg).

The author does recommend pre-cooking or rather sauteing prior to placing the ingredients in the slow cooker which does add quite a bit of additional time but so far the results have been really worth it.

I tried other vegetarian books with much more limited success, usually the recipes lacked flavor. So if you are used to cooking a lot of beef or chicken recipes with intense flavor, and now want to augment your vegetarian repertoire then I would recommend this book.

Book Review: This one's the best!
Summary: 5 Stars

I checked this book out of our local library to peruse it and try some recipes before I made my purchase. At the same time, I checked out several other similar books. I love the layout of this book & that the recipes are simple and delicious.

There are also a lot of mouth-watering color photos which provide inspiration, but there are not photos for all the dishes. I'm not deducting a star for that, however, because full-color photos for every recipe would equal a much higher price,

The author notes when recipes are "Vegan Friendly" right at the top of the page, so they're very easy to spot. Also, there are instructions for which parts could be done in advance (when required) and stored in the fridge overnight, making morning assembly in the crock pot a cinch for those who are unable to spare a few extra minutes in the morning. This is one cookbook that I know already is going to get a lot of use!

Book Review: This book is FANTASTIC
Summary: 4 Stars

I was hesitant to purchase this book because I'm Vegan and I spend a lot of my time revamping vegetarian cookbooks to fit that lifestyle, having to omit and replace, but this book was fantastic! There are many, many items in the book that are vegan "friendly" and I have to say, they are totally delicious. Last night I made the Sweet Potato and Barley Risotto - outstanding. Needed just a little dab of soy milk (or soy butter) for a creamier texture, but it was fantastic and didn't require any salt for flavor whatsoever.

The only shock for me was the amount the recipe made. The recipe suggests it serves 4. Even as a main dish, if that was a serving, I would be big as a house. It could easily serve 8-10 with 1 cup servings. 1 1/2 cups barley really expands when cooked!

I am thrilled I bought this and would recommend it to vegetarians, vegans, and meat-eaters trying to find variety alike!

Book Review: If it weren't for this book I wouldn't be slow cooking
Summary: 4 Stars

This is the best vegetarian slow cooker cookbook that I've found, though there really aren't many others. I own two vegetarian slow cooker cookbooks and this is the only one I use. In the year that I've owned this book I've made close to 30 of the recipes. The photos in the book are enticing and the recipes are easy to follow and for the most part have been flavorful and popular with my family. I especially like the spicy recipes like Caribbean Pepper Pot Soup and Red Lentil and Carrot Soup with Coconut. There have been a few duds- Cannelloni with Tomato Eggplant Sauce didn't turn out well from my slow cooker. I have come to really embrace the technique of precooking the vegetables as suggested by Finlayson since this lends much better flavor and texture to the finished dishes. I am back today to purchase a copy for my sister, also a vegetarian and soon to be a regular slow cooker.

Book Review: Fantastic Recipes!
Summary: 5 Stars

I have a shelf full of cookbooks and several slow cooker specific books. I usually consider a cookbook worth the money if it gives me one really great recipe that becomes a regular staple of my cooking repertoire. I consider a cookbook a success if there are two or three that are particularly great. This cookbook has exceeded any expectation I have. Every recipe I have made has been phenomenal, packed with flavor, very easy to make, and worthy of making again and again. The tortilla soup is restaurant-worthy!

I'm not a vegetarian, but one of my best friends is. When we cook together, we go veggie. She owns this book and loves it, and I'm ordering a copy to have at my house, because some of these recipes are so good, even a committed meat-eater will love. If all vegetarian food tasted like these recipes, I wouldn't miss meat.
