There are a long list of these "classrooms in a book" things. I don't think this is the best source for Photoshop 7, but it was required by a class I took. I really think the best book of this nature is The Photoshop Bible (did 7 come out yet?). I think their examples of what they have you work through are more practical AND thorough. They are also just more complete in general.

I am just starting with the book but I have already been able to use it to improve some photos. It helps me to learn the terminology and how to move around and have the software do what I want. It is making Adobe less of a mystery and more of a tool.
I would certainly recommend this book to anyone who wants to make photoshop more useful for them and really know what you are doing.
Book Review: good for beginners Summary: 4 Stars
If you are completely new to Photoshop, this is a good place to start. Doesn't go through everything (almost impossible to do since the program is so huge), but it provides a baseline knowledge of the program to build on.
If you are a beginner, avoid the Visual Quickstart Guide. I bought it first and took it back after I couldn't learn anything from it.
Book Review: Great way to get a handle on a complicated program Summary: 5 Stars
I am through lesson 5 in this book right now and I love it. Photoshop 7.0 seemed like an overwhelming program, but this book breaks it down into simple lessons. It is also cross-referenced well and each lesson builds on the last.
It also has a lot of overlap with Imageready. Which is cool.
Definetly two thumbs up.
Book Review: Great for Beginners, expirience user get another book Summary: 3 Stars
WELL!!!! is a good book for beginners (for them is excelent) but have all the examples (pictures)in black and white wasen't a good idea. I use this book as the course material to teach biginners. As a instructor i recomend this book for beginners with NO EXPIRIENCE in PhotoShop. I rated 3 stars this book for the examples pictures in black and white.
