I disagree with the earlier review by Christopher M. Raiti. I was a beginner when I first used this book and it has plenty of tips for beginners. Overall a great book with plenty of info on how to select charcoal, wood, and meats. Well worth the money. Another great book is Paul Kirk's Championship Barbecue Sauces. It has great tips and recipes for rubs and sauces
Book Review: A smoking playbook Summary: 5 Stars
Smoking and BBQ are quite different arts (as my family kept telling me when I dished up disasters of the former....).
This book has helped me put great SMOKED food on the table ! A bit of a step by step, which I liked - always easy to work with frameworks.
Good book as a kickoff point if you are wanting to learn about smoking.

Many of the past reviews mention the typos, but who really cares? I have lots of BBQ books and this one is a must have. This book is easy to read and understand. I am telling you to buy it, read it, learn from it and you will be cooking some great BBQ in no time. If Kansas City was closer to Houston I would take his classes in a heartbeat.

Chef McPeake has written a book full of very solid info on smoking and BBQ. He clearly knows his stuff and has the ability to share it with the reader.
His long career as a chef combined with his experience at all the cookoffs in Kansas City is a winning combination.
You'll learn a lot from this book, I don't care who you are.
Book Review: Straight forward, clear information Summary: 4 Stars
Chef Richard McPeake does a fine job in presenting information in a logical way. He includes equipment, techniques, ingredients and finally recipes. His experience as an award-winning bbq chef really comes through in his explanations of how to create a bark and smoke rings. An excellent resource that I'll be using for years to come.
