Book Reviews of Baking Illustrated

Book Review: Big 5 Star Dittoes
Summary: 5 Stars

This won't be a long review. I only wish to say that of the 15 or so recipes I've made so far, all 15 have been complete successes. I attribute this to their excruciatingly detailed instructions (many with step by step photos for difficult techniques) and the science behind the recipes. Even so, the recipes are very easy to follow.

I've made several of the yeast breads, the cinnamon rolls, breakfast pastry, pizza dough, numerous cookies, and FINALLY, pie crust (which in 30 years of baking I'd NEVER been able to make an "excellent" crust, always mediocre). It's a keeper, and one of the two cookbooks I keep on my kitchen counter next to my Kitchen Aid Ultra Power :)

Book Review: They make all the mistakes so you won't!
Summary: 5 Stars

A buddy of mine, who is a "very technical" chef, recommended this book to me. It's everything he said it would be. The writer goes in debt on pretty much every subject. Most baked items were done 4 or 5 different ways and the results are discussed. This is good stuff. It's like having an instructor there in your kitchen to show you the right way and wrong way to bake. I only bake breads, but this book got me looking at a whole lot more! I have about 10 books on baking breads, but this one is one of my favorites. Information is for beginner to advanced level bakers. I've been baking breads for over 10 years and I'm still very impressed with this book! Go for it!

Book Review: LOVE IT!!! Can't Get Enough of this Book!
Summary: 5 Stars

That's how good it is! All the stuff that I've been trying to look for is all here! I just borrowed it from the library and kept renewing it over and over again. Hahaha!! I tried a bunch of recipes in this book. The carrot cake at first threw me off the loop. But, the second time I tried it, I whipped the eggs and sugars until it became light and fluffy and it came out perfect! I even added some chopped pineapple to it and chopped toasted pecans and it came out beautifully. To die for Sour cream fudge cake, the yummy lace cookies, and, oh my, the thick and chewy chocolate chip cookies!!!! I got to buy myself a copy of this book for sure!!!

Book Review: Rated 10
Summary: 5 Stars

I received this book as a present last Christmas. Someone told me the book was not that great so the book was put in the cabinet with the rest of my cookbooks until this summer when I decided to try a recipe. I tried the snickerdoodles and they were better than my sister-n-laws, everyone raves about her cookies. Then I tried the banana bread and well I have been using the book ever since. I love the explainations of how they came up with the recipe and also all the useful tips. They are so interesting and insightful. I am a lousy baker but now that I know why I am determined to keep trying for that perfect loaf of bread.

Book Review: Wonderful
Summary: 4 Stars

This book is so detailed and informative. Even if you think you know a lot about baking there is much to learn from this book. I know some people don't like it but the lengthy explanations are great. I like learning how they came up and decided on the recipes. I just made the blueberry muffins this morning. They were soft, flavorful and had nice round tops. The batter was the best tasting muffin batter and the final product was perfect-not too sweet or dense. I highly recommend this book if you are looking to learn. If you just want pretty photos and basic recipes, look elsewhere.
