I'd have given this book five stars if it weren't for the pie-crust recipe error. As other reviewers have noted, the recipe calls for twice as much fat as is needed. I don't know if later editions of the book include an errata, but the Cook's Illustrated website does not. This book would be perfect for curious beginners, but I'd hesitate to recommend it in case there are other errors, especially since the editors have not taken the trouble to create a simple online errata. Neophytes, and even some intermediate cooks, will not necessarily spot the errors before trying the recipes.
Book Review: LOTS of recipes Summary: 5 Stars
This cookbook is fabulous if you love to bake. I can't think of one recipe I've wanted to try and wasn't able to find it in this book.
The whole reason I bought this book is because a friend made homemade blueberry muffins from a recipe in this book and they were the best I've ever had.
Another recipe I go back to at least once a month is for Buttermilk Biscuits. Delicious!
There is lots of information other than recipes - guides and diagrams on how to do things (cut/slice, etc.), pictures, etc.
This would be a great gift for anyone who loves to bake!
Book Review: Poorly Edited Summary: 3 Stars
I purchased this book with the primary intent of learning how to master pie crust. I have a subscription to the Cooks Illustrated magazine and find the in-depth descriptions of cooking techniques to be very helpful.
However, after having attempted the pie crust recipe several times with much frustration, I realized that the recipe is actually wrong! There must be a typo in the recipe because it calls for equal parts of four to fat. It's a goopy mess and the experience was frustrating enough that I don't trust the other recipes in this book.
Book Review: A little disappointing... Summary: 2 Stars
As a beginner baker I found this book totally uninspiring; 500 pages thick without very many photos. Normally I would never buy cook books without beautiful illustrative photos, but because this one said "Baking Illustrated" with excellent ratings from other customers I assumed it would be wonderful. I'm not even motivated to try any recipes here because they are really text-heavy and written in such a complicated language like others previously commented. I am now further turned off by the fact that some of the reviews here say the recipes contained typos.
Book Review: Absolutely Fabulous! Summary: 5 Stars
This product is wonderful, just like everything else from America's Test Kitchen! Detailed descriptions, helpful illustrations, and step by step instructions make this a smart buy for any baker who wants to improve their skill. And since all the recipes have been tested countless times, you can be confident that what you are baking will be delicious and beautiful. I usually test my recipes before giving them to others, but I do not need to do that with this book. Everything I've baked turns out perfect! I could not be happier with this purchase!
