Book Review: More than just a Cookbook
Summary: 5 Stars

This book is excellent - not just because it contains very good, reliable and tasty recipes, but because it explains how and why the recipes are put together the way they are. Before each type of recipe, the authors explain the testing process they went through, what their specific goals were and how they reached them. This information is extremely helpful for those of us who want to take the next step and really understand how things work. All of the recipes I have tried have been very good and have worked exactly as described. Highly recommended!

Book Review: Temperature and cooking duration

The book is excellent from the point of view of explaining ingredients. However, I think they really blew it in the sense that they do not provide any information whatsoever with respect to various oven heat choices...convection, surround, top, bottom etc. The result is that unless you are an experienced cook, you still are faced with a lot of experimentation to get a reliable satisfactory baking outcome. Just think how helpful it would have been to have an matrix of oven setting choices and cooking duration accompanying each recipe.

Book Review: A must have in your cookbook library

Quite simply, this is the best book on baking that I have ever come across. Not only are all of the recipes clear and easy to follow, but have been extensively tested to ensure that everything comes out as intended.

The thing I like most about this book is that the authors give you the reasons and explanations behind the recipes; Why do I need to sift the flour? Why should I use whole milk instead of skim? What happens if I don't put in enough butter? It's all in here.

Book Review: My favorite baking book by far!

For cooking, my favorite cookbook is The Joy of Cooking. Now I have found a matching volume for my baking. I absolutely love that all aspects of these recipes are tested...there are very detailed descriptions of why each ingredient and each procedure is included. I love my cookbooks with pictures, and this one doesn't have many, but as far as actual information and stable recipes...this book beats them all. If you need to add some confidence to your baking pick up this book.

Book Review: Just What I'm Looking For

This book is very precisee, which is exactly what I was looking for in a baking book. I like that the measurements of the flour are also given by weight and that an instant read thermometer is used to check if the bread is done (otherwise, how is one supposed to know how "hollow" a loaf should sound?). I also like the blurbs about what qualities the editors are looking for when determining what is "best." A most excellent book on baking!
