This is the most comprehensive canning book I've read. There are a huge variety of recipes, including traditional recipes, contemporary and creative recipes, and everything in between. This book has become my 'coffee table' book and it is the first book that I reach for when I feel like canning some fruit or veggie that was on sale at the grocery store that I couldn't pass up. I've tried about 15 of the recipes in the book--directions are straight forward, easy to follow, and ideas for using everything you make. The best thing I like were the creative ideas for using what you make--this book goes way, way beyond toast. If you're dependent on pictures for step by step directions this may not be the book for you but if you've canned before and don't necessarily need pictures then this is a wonderful choice in canning books.
Book Review: Great Canning Book! Summary: 5 Stars
I have used many of the recipes in this book for canning. I have even used the book recipe ratios as guidelines for my own canning recipes. The blueberry syrup is a great hit, the peach salsa devoured quickly, and the BBQ sauces, pickles and relishes are very, very delicious.
During canning season, I run through the ads with this book so that I can find the best deal on produce, and preserve at the best price possible. This is what canning was originally intended for - canning seasonal produce for later consumption. Right now, I am canning cranberry sauce because you can find cranberries on sale at the stores.
Also, I like the way the recipes are formated on the page. There is white space at the bottom of the recipe where I can record notes on modifications or techniques I used for the recipe.
Book Review: Great Book Summary: 4 Stars
I have the Ball blue book wdhich I love and decided to add this book to my collection. I have to say that I am very happy with this book since it gives in depth instructions as well as the conversion chart for the amount of produce you will need. The only problem that I have is the large amounts of sugar that are used in alot of the fruit recipes. The only other thing that I noted was that they should really direct you to follow the directions that come with your pressure canner. According to the Ball book you'll know it is safe to open the pressure canner when the gauge reads zero but according to my pressure canner instructions you are supposed to wait until the pressure valve stops hissing and they warn you not to go based on the gauge. Otherwise this is a great book that will get used a lot in my house.
Book Review: read carefully at least twice Summary: 3 Stars
I was, and still am really excited about the recipes in this book. Everything I have made is wonderful- tastes soooooo good, and I've not had an ounce of spoilage or anything. It's nice to see much great selections of modern recipes! This book really changed my mind about stodgy old canning my grandma used to do.
The one thing that drive me nuts- I've yet to have a recipe be even close to accurate for it's yield. The figs preserves were really short of what the recipe said I'd get, the red pepper spread was about 2X what I expected....it's all across the board. So, yes- buy this book, preserve food and make awesome gifts, have canning parties. But when you read the recipes, think through very carefully about what your yield will actually be!!!
Book Review: I love this book. Although I am a new canner. Summary: 5 Stars
I am a new canner and I love this book. I did know a little about canning but this is my first year doing it by myself. I like the produce purchase guide in the back of the book and also the trouble shooting guide. The produce purchase guide shows you approx how many fruits and/or veggies to a pound so that if a recipe calls for something by pounds in lieu of cups it's there for you if you don't own a scale.
I have a basic garden, nothing fancy. I have done the tomato juice, Simple "House" Salsa and Peach Salsa from this book and they are all wonderful. I do like the step by step instructions since I am new at this. It maybe a little repetitive for the experienced canner but I liked it.
