Book Review: Fantastic resource

I checked this book out from the library and I didn't want to give it back! I ended up ordering it because I would have spent forever photocopying the pages out of my borrowed copy. As a beginning canner, I wanted a variety of safe and tested recipes to use for summer produce. I have the Ball Blue Book of canning, which is around $5. That was fine but I wanted to find more specific recipes for the things I had available to preserve. I only do water bath canning, so the variety of salsa recipes were intriguing for me. I just canned up some last week. This will be a great resource to have on hand for years to come. It's a great manual for anyone interested in preserving food or making jams, salsas, chutneys or pickles for gifts.Book Review: Preservng the harvest

I had a copy of this book (earlier edition) years ago when I first started canning and over time it was lost in the shuffle. I ordered it this year to help contend with our garden output and we found so many wonderful ideas for preserving our harvest that my husband actually started going to farmers markets looking for things we didnt already have just so we could try new recipes. I especially like the fact that the book talks about the science of preserving food safely. This has got to be the definitive work on home food preservation. We love it and will be trying new things for years to come I am sure. If you want to get started with food preservation or step up to new challenges, this is the book for you!Book Review: Good For Beginning Canners

This is a great book for beginners. It has a lot of good pictures and instructions. I was a little disappointed because I was looking for new recipes. Sadly, there were not many that I had not already seen. But I have been canning for almost 40 years. It really did not have much more that the "Blue Book" that most of us have used for years.
I'm updating this review. I must not have really looked at the book closely enough before because it has quite a few new recipes. I have tried some of the recipes and have been well pleased. I recommend this book for beginners and seasoned canners. If I could figure out how to change my review and give it 5 stars I would.
Book Review: Great Book - Plenty of Fruit/Veggie Recipes

I am really enjoying this book and am so glad I added it to the many other canning books I have. I picked up 75 pounds of peaches and am making a number of the great recipes in this book with them - honey spiced peaches, cranberry peach conserve, peaches in syrup, zesty peach barbecue sauce plus possibly a few others. There are tons of interesting recipes in this book. I'm really excited. I only gave this four stars though because I agree with the other reviewers that noted that the book is light on pressure canning recipes. That section could certainly be beefed up. It's probably about 80% (if not more) boiling water canning recipes.Book Review: the best ball book

The cheap ball canning book is sold next to the canners in the discount store. But this is the book you need to really can tasty food. The blue book is high in sugar, low in cooking time,,,, lots of over sweet foods that taste off. Canning is a skill, you must have sugar, vinegar and corect cooking time to AVOID FOOD POSIONING.
I am appalled at the people who want to can and ignore the possiblity of killing their friends and neigbors with lack of proper care. We in the US saw a huge problem with canned FP in the 70's, this book will help aviod that , and give you tasty food.
