Book Reviews of Ben & Jerry's Homemade Ice Cream & Dessert Book

Book Review: MMMM Good!
Summary: 5 Stars

I love vanilla ice cream...boring to most, but my flavor of choice. I also was very concerned about the raw eggs, but I took the risk (now that others have written about cooking the mixture and it turning out ok, I will try that.) I flipped back and forth between cook books to find the differences, most just used yolks, this uses the entire egg. Having just purchased the ice cream attachment for my Kitchenaid mixer, and still looking for the perfect vanilla ice cream, I had a sample of the product left from the book that came with the attachment, and the Ben and Jerry's vanilla to compare. The Ben and Jerry's made a far superior product. It was smooth and delectible...the other was darn good, but it was harder than the Ben and Jerry's and was somewhat crystalized.. After a couple of days in the freezer in a container (it is ultra rich), the Ben and Jerry's was still smooth and easy to scoop. Now I just have to get over trying to cram a double recipie in maker...it doesn't freeze to a good consistency and you end up wasting too much. Of the ice creams I have made now and in the past, this far surpasses any. I'm going to try the Ben's Chocolate with peanut butter cups....yum!

Book Review: Not bad for a starting point.

I bought a Musso Ice Cream machine from Amazon.com (Great product). The book that came with the machine was too basic. I wanted something with more choices. The Ben & Jerry's book seemed to have some promise. The books covers many popular recipes which will be familiar to you (Based on store bought). The stories that accompany many of the pages are quite interesting and somewhat entertaining.

My biggest problem with the book is that all of the recipes call for RAW eggs. They do not cover the custard style ice cream which requires you to basically cook the eggs. With all of the conceptions that eating raw eggs can cause problems, its a shame that there is no explanation of this. I would like to have some choices in my ice cream ingredients. And putting in raw eggs makes me a little uneasy. I have made ice cream using both methods, with and without raw eggs, so I know the taste difference. However, the choice to use raw eggs or not would have been welcomed.

If you are looking for an entertaining, somewhat informative book to get you started with ice cream making, give this a try. Don't hesitate to search the net for custard style recipes also.

Book Review: just ok

I bought this book with the hopes of learning something about ice cream and making flavors as close as possible to my fav ben and jerry varieties. Sadly, I learned very little from the book that I couldn't have gotten from the manual that came w my kitchen aid attachment. For my base cream I do not use the recipes from this book as i am not a fan of the raw egg technique - I make a basic creme anglais and flavor it which has worked perfectly for us.
An example of my disappointment would be in the cherry garcia recipe. Obviously they are not going to give exact recipes, but tricks and tips would be helpful especially when working with fruit. When you use straight up fruit the water content freezes and you have fruit cubes when you eat the ice cream. I swear by Americas Test Kitchen and when I made their strawberry ice cream (which was amazing) I used a little vodka in the strawberry mixture and they were the perfect consistency - but there has to be an alcohol free way.
All in all this is a cutesy book that's fun to have in a collection - but definitely not an ice cream bible especially for somewhat experienced cooks.

Book Review: victory for ice cream lovers!

I have been making ice cream like crazy since my grand daughter received these two items for Christmas in NC. I ordered both items as soon as my husband and I came back to North Platte,Ne. (actually, it was my husband who insisted we get an ice cream maker,he went everywhere in NP looking for one !!!) He then asked me if I knew how to order over the computer! ( He's a little challenged when it comes to technology, Ha! ) !Of course, little does he know how easy it is for me to order from Amazon! (considering I have close to 300 books on my archives for my kindle2) He's going to give me his credit card, not knowing I can buy with "one click" --- and that's it!!! Love it, Ha! Book and ice cream maker are fantastic. And the basic recipe was no problem to memorize (considering I've been making it for weeks!) What more can I say? Customer service is the best ever, esp. for the kindle. My kindle has a mind of it's own,(clicks to buy when I'm still reading the review!!) So needless to say I spend a lot of time with Kindle reps. Not one has been rude, and they all end of laughing at my problems!

Book Review: The only ice cream recipe book you need!
Summary: 5 Stars

This is one of the most adorable little cookbooks I have ever seen. It has the cutest artwork, in keeping with most of the Ben and Jerry's ice cream designs on their cartons. It has a cute story in the beginning which explains how they started in the business and became successful. It's a cool story. In the beginning of the book they explain different techniques. For example, if you are using fruit they tell you which fruit to add sugar to and which ones not to. There is a section for their Top ten flavors, then some fruit recipes, chocolate, of course, and frozen yogurt and other treats like cakes and cookies. They have three cream base recipes and number one is their most popular and that's the one I have been using with a lot of success. I made the chocolate chip cookie dough recipe and I thought it tasted almost 100% like the real thing. Maybe even better because it was so fresh. (For reference I use the Cuisinart IC-30 stainless steel 2 quart ice cream maker)For $10 this is a must-have for anyone that owns an ice cream maker. The recipes are simple and yield great, tasty ice cream.
