Book Reviews of Ben & Jerry's Homemade Ice Cream & Dessert BookBook Review: Entertainly and Educational Summary: 5 Stars
We purchased this book at the same time as we invested in Cuisinart's Indulgence Ice Cream Maker. Both were excellent purchases and make a great team.
Please read the introductory pages and sidebars in this book. Not only a fun read but also enlightening and encouraging for small business dreamers and ice cream makers.
All of the recipes I have tried say they make a quart. This is a generous (of course) quart because generous is part of Ben and Jerry's philosophy.
We like a little sweeter chocolate so I substitute semi or milk chocolate for their unsweetened chocolate squares. I also use a microwave to melt the chocolate rather than double boiler. Just my preference.
We started reading some of the book aloud to our teen kids and they asked for more! Along with their ice cream, of course.
Book Review: Great buy Summary: 4 Stars
Great little book to start ice cream making with. The intro is mostly biography, there is a section to better understand ice cream making (key ingredients, why you need to use whole milk as opposed to fat free, etc), and the rest of the book is recipes. They have great techniques, but they are often in sidebars, rather than being on a separate page or chapter. As far as the recipes go, it is great- they have different ice cream bases, and suggest in each recipe which base works best for flavor. They also have recipes for sorbets, toppings (fudge, caramel, etc), and other desserts that can be used as add ins (brownies, blondies, etc). It also, obviously, doesn't talk about frozen yogurt. My only problem is that it isn't quite as organized as I would like to get to a specific technique, like adding a fudge swirl to an ice cream. Great buy.
Book Review: What a treasure trove from the masters of American ice cream! Summary: 5 Stars
I received a Cuisinart ICE-21TQ Frozen Yogurt-Ice Cream & Sorbet Maker, Turquoise recently and immediately ordered myself a copy of this book so that I could take full advantage of the opportunity to make my own ice cream. Ben & Jerry provide a candid history of the birth of their frozen empire and generously disclose a bunch of their very best recipes. Of these, the basic sweet milk recipes are priceless as they form the base for the majority of the recipes. The Cherry Garcia delivers an authentic experience (my favorite) and the mocha recipes are a huge hit with my 17 year old. Pair this book up with an ice cream machine and you have a wedding or graduation gift that will bring you to mind for years to come - in the best possible way!
Book Review: yummy ice cream Summary: 4 Stars
I tried several ice cream recipes that came with the recipe book with my ice cream maker as well as several I found online, they were all terrible, didn't freeze well, some didn't even make ice cream. Ben and Jerry's were the best recipes. The only problem I had was using the raw eggs. I e-mailed them and they told me they don't recommend using raw eggs. They told me how to pasturize the eggs or better yet use egg beaters. I have been using egg beaters in all their recipes and the ice cream comes out the same. They need to revise this book. I also asked them for some light recipes or frozen yougurt recipes which they told me they were not willing to share at this time. It would be great if they did another book with some new flavors. I recommend this book but do not use raw eggs use egg beaters instead.
Book Review: Good Food and Lots of Fun! Summary: 4 Stars
We recently purchased a high-end electric ice cream maker (the Simac "Gelatio Magnum") and, along with it, the Ben and Jerry's Ice Cream Book; we're in love with both products! Ben and Jerry share the recipes for all of their best flavors--including chocolate chip cookie dough and Heath Bar crunch--plus tell you their own story and "ice cream philosophy." It's a fun cookbook with plenty of practical tips. So far we've made six or seven of the recipes, including the French Vanilla (not as rich as I'd like), Strawberry Banana (wonderful, but add an extra banana) and Orange Dream (our favorite). Their sweet cream base is extremely easy to make--it takes about 15 seconds--but if you prefer a richer, more creamy consistency, look for a cooked "custard"-style receipe.
