This has to be my favorite cookbook of all time. It isn't the recipes that keeps it readily available in my kitchen, even though it does have a lot of really good ones.
It is the many charts. There are cooking tables for everything from meats to eggs to pastas. Conversion charts; how many cups in a pint, how many teaspoons in a tablespoon etc. There are definitions; what is a dash, what do they mean by "stew"? What is the difference between Butter, Margarine, and Vegetable Spread? What's the difference between Cube and Dice? All of these are explained at some point in this book.
Each section has a small helpful chart before they start the recipes. The herb charts have been a great help. They include brief descriptions of the flavor, as well as the types of uses they should be mixed in (ie: Thyme (Leaves, ground) flavor: aromatic, pungent, Use: Chowders, fish, meats, poultry, stews, stuffings, tomatoes)
The recipes contained within range in abilities from very simple, to quite complex. You can cook Popcorn Balls, or Divinity. Meatloaf or Enchiladas, Noodles Romanoff or Linguine with Red Clam Sauce, Ceasar Salad or Spicy Beef Salad with Ginger Dressing, Banana Bread or Honey-Mustard Oatmeal Bread. No matter your skill level, there is something in here to allow you to cook something delicious for your family.
In all, this book is far more than a cookbook. It is a necessity for anyone who wishes to know more than how to cook a frozen meal.
