This book is on the right track, and chances are you are too if you're looking into it. However, I don't like the recommendation of "low-fat" meats and dairy products. Low-fat products are as much of a modern deviation from nature as sugar and flour are. Low fat dairy products, for instance, almost always include the addition of dry milk solids. (They don't have to put this on the label, due to official FDA definitions of the product as "including" the hidden ingredients.*) These milk solids have been highly processed and have oxidized cholesterol (the bad kind) and free glutamate (MSG).
Humans are intended to eat fats, and have been doing so for most of human history. In times of abundance, they would often take the fats (and organ meats) of an animal and leave the muscle meat behind. They even had names for malnutrition that occurred from eating only muscle meats- the kind we exclusively eat today. And their health was far better than most people would ever believe. They knew from experience and tradition how to keep themselves and their children in optimal health. Cholesterol, saturated fats- it's all good, and in fact necessary for human health. The propaganda we hear today is nothing but "big fat lies"- in fact there are a few documentaries that use that play on words, if you type them in a search engine.
It is the sugars, refined flours, and refined vegetable oils that have brought the world to its knees, like we see in present day. Even now, the last of traditional peoples are abandoning their native diets for Coca-Cola, because they are all persuaded to be like America.
