In her introduction to Glorious One-Pot Meals: A Revolutionary New Quick and Healthy Approach to Dutch-Oven Cooking Elizabeth Yarnell talks about one pot cooking as a way for people who want to cook but don't have a lot of time or patience to get a flavorful healthy meal on the table. Everything is designed to be baked in the oven for about 40-45 minutes freeing you up to take care of other things while your food is cooking. As a side benefit, cooking everything in one pot means fewer dishes. Yarnell makes it clear though that one pot doesn't just mean soups and stews but can mean a whole range of dishes.
Among the things I liked about this book were the sheer variety of recipes. Yarnell does a good job of providing meals that not only incorporate typical American flavors but also ethnic influences from elsewhere in the world. Think Springtime Paella, Yemenite Lentils, Thai Curry with Tofu, Greek Chicken, and Savory Port-Mushroom Chicken, and Chicken Marengo. Her recipes show that quick food doesn't have to be standard I also appreciated that she offered nutritional information including calorie counts, protein, carbs, fat, cholesterol, sodium and fiber. It doesn't mean that everything is low calorie or low fat, but it's at least nice to have the information to make an informed choice if this is important to me. Overall I think this book establishes itself as providing a diverse collection of health-conscious recipes for those who want to produce a good meal without a lot of time, effort, or money.
That said there were a couple of things I didn't like about the book. I agree that these recipes aren't as well seasoned or flavorful as they should be. It is true that you can tweak with your own seasonings but a 5-star cookbook for me is one where the recipes are flawless as written and give me all the instructions and ingredients I need to make a complex meal. I also think that this is especially crucial if you're creating a book designed for beginning cooks who may not be as eager or knowledgeable about what to add if a dish comes out bland. I also think she could have been more descriptive about how to tell when the dish is done. Her instructions tell you to bake until the aroma of a fully cooked meal escapes the oven, but I think that is pretty vague, especially for new cooks. I would have preferred to have notes about what I should be expecting in terms of the temperature of the meat or texture of the dish. I was also disapointed that my edition had no photos except for what was on the cover. I know that photos can be expensive to include, but even having a handful (especially for the dishes with less descriptive names) would have gone a long way in getting me excited about the dish.
Overall I think this is a cookbook that is good, not great. I think Yarnell does a good job of developing a technique and showing the breadth of dishes it can creative by switching up the flavors. However, the frequent under seasoning and vague directions at time keep me from making it a 4 or 5 star book. If someone came to me looking for a recommendation for quick meals I would be much more likely to recommend something by Rachael Ray (although I don't care for her personality I do give her credit for coming up with very flavorful and interesting meals that can be made in 30 minutes or less) or Everyday Food. Both are more reliable in my opinion for quick, flavorful food that comes out well as written.
