Book Reviews of Glorious One-Pot MealsBook Review: I Love This Cookbook! Summary: 5 Stars
Thank goodness for creative people like Elizabeth Yarnell! I attended one of her demonstrations when I was in Denver and was so impressed with Elizabeth and with her innovative new cooking method that I bought a cookbook for myself and several others as gifts. And was I glad that I did. Sudden weekend guests were duly impressed with the Sante Fe Chicken recipe, a delicious and healthy meal that took only an hour from prep to table (and, mind you, forty-five minutes of that was oven time). Before attending her demonstration I was dubious about how her One-Pot method could be different from the crock-pot recipes I've been following for years. Trust me, it is different. I am not surprised that she received a US Patent. If you're looking for an easy way to cook really healthy and tasty meals, I can't recommend a better or easier to follow cookbook. You should try it! You won't be sorry.

I am a subscriber to Vegetarian Times, where your recipes appeared in the October issue. Reading the article I was inspired to go to my local hardware store and buy my first Dutch oven. The recipes were fantastic, so I was further inspired to Google you and your book on-line and bought the Glorious One-Pot meals cookbook. I am now a devoted fan and will definately be buying any cookbooks you write from here on out.
As a vegetarian, I love the recipes and find it easy to alter the meat dishes to veggie versions. One last note, as a working person, I tend to do cooking on the weekend and rely on leftovers, so I like servings for four, even the eight in VT, instead of for two. But, so far doubling the recipes hasn't been too hard to figure out. :-)
Thanks so much for your wonderful recipes, I love the one-pot meals!
Book Review: This book is genius!! Summary: 5 Stars
This book is genius!! It has changed my life. I received this book as a wedding gift but really starting using it when I had a baby and found myself without any time to cook. It is amazing!! You can put together the most delicious meals (penne puttanesca with shrimp, bahamas chicken...), in about 20 minutes and then you're done. All you have to do is stick it in the oven - you can enjoy your pre-dinner time without having to spend it in the kitchen. And the food is so good. Not only do you get to choose from a wide variety of recipes and you can spice it to your taste but it's amazing that you can throw raw pasta in with a bunch of other ingredients and even though you cook it all together, everything turns out perfectly. This is a MUST buy for anyone who enjoys and appreciates good food but has a busy life and not a lot of time to cook. Plus, it's really healthy!!!
Book Review: OK, not great Summary: 3 Stars
I've prepared four dishes from this book so far and none of them were fabulous. They are definetely easy to prepare and I love the one pot idea but the taste leaves something to be desired. One dish was much too dry. Maybe if you make a dish once and then improvise and tweak the ingredients, it might make them better, but I wouldn't serve any of them to company yet! The best thing about this book is that you can eat healthly because the meals are prepared with fresh vegetables, fruits, lean cuts of meat and fish and no additional fats. So from this standpoint, preparing healthy food it's a big plus. It's worth a try because I think if you're willing to experiment, you can make the basic recipes even better.
Book Review: Not Sure Yet... Summary: 2 Stars
I'm not sure about this cooking method just yet. I've tried two recipes, neither of which was glorious. Both were tasty, but the textures were questionable, especially the rice. I found that a good quality basmati rice came out like a quick or instant rice. I'm still planning to try a pasta recipe, but I'm concerned that it may produce mushy pasta, while we prefer al dente. If the pasta dish doesn't turn out, I think it will be worthwhile to try the recipes with just meat and veggies, adjusting the proportions appropriately. It won't be a one-pot meal, but it will most likely be very good. And if nothing else, my new 2-quart Le Creuset oven that I purchased to try these recipes, is a dream!
