Book Review: A Keeper for my collection

This is a book that serious collectors of Chinese cookbooks will want. Henry Chung and his wife owned a Chinese restaurant in San Francisco that was hailed by one critic as the 'best Chinese restaurant in the world' and Henry is well-regarded as something of an expert on the cuisine of Hunan. I cannot remember where I bought this book but it was a second hand purchase and after I bought it I saw that the frontispiece had been signed by the author and dedicating that particular copy to one Greg Lowder. I have no idea who Mr Lowder might be and I can't think why he came to lose possession of this nice little tome.

In general terms, this is not a great cook book; there are very few pictures and the recipes, while straightforward and easy to follow, are not especially spectacular. Still, the book as a whole is a great introduction to a unique regional cuisine and the personal and cultural anecdotes scattered through the text make it a very interesting book to read other than purely as a recipe collection. Interestingly, the recipe for Kung Pao chicken is attributed to the chef of one General-Tso, but neither this nor any of the other chicken recipes provided bear any relation to the sticky-sweet North-America Chinese restaurant dish sold under the name 'General-Tso's chicken'.
