Book Review: Fran really knows her stuff, for real!

It's great that there are a growing number of vegan baking and dessert books out there, but for my money this is still the book to turn to.
Fran is an incredible practiced, supremely dedicated pastry chef and she really understands the ingredients she works with, the methods and all the tricks. Her recipes are so clearly developed with care. She's not just interested in getting something on the page that will work, but testing and evolving, exploring and tweeking to find the perfect recipe. I think that's a rarity and that care is in every page of her book. This is a book to learn from as well as bake from.
Fran also brings a more whole foods minded approach to her work, which is great in these days of Earth Balance and powdered sugar.
