Book Review: Not as good as I thought it was going to be...
Summary: 2 Stars
Let me start by saying I can cook and bake very well, this is not bragging this is simple fact. I can whip a meringue by hand within a few minutes no problem, but with this book I had nothing but problems. Let's start with the crust, I could not get it to hold together no matter what I tried it just didn't work. I ended up freezing the pie dough and grating it into the pie plate and then pressing it together with my fingers. Which seemed senseless to me why should I have bought a book specifically about pies if the crust recipe won't even work? I have tried alot of pie crust recipes and this one is the worst. I tried not to let that influence me and thought maybe the fillings will be better. Boy was I wrong. As for the pie fillings themselves, they all seemed to be off just slightly the chocolate pie was a little too thin, the shoofly pie filling was watery etc. etc. I was at this point desperate, please let the meringue at least be good so I don't feel like I wasted my money! It wasn't. As I said before I am no stranger to meringue and I thought wow weepless meringue that would be great I won't have to worry about that awful watery layer on my pie filling. It started to look promising, the whites turning into puffy white clouds is always a good sight but as soon as I added the cornstarch mixture (that's what keeps it weepless) the egg whites fell, I thought I had done something wrong so I tried it again and same results. These recipes may be Mrs. Rowes but I feel like they have been tweaked until they no longer work. Save your money and buy a more worthwhile cookbook, try The Lady & Sons Savannah Country Cookbook Collection I've never had a problem with any of Paula Deen's recipes and the one for pie crusts is fantastic.
