Book Reviews of The Bread BibleBook Review: Delighted with the results Summary: 5 Stars
I did approach this book with some trepidation - it is a comprehensive book & I read the negative reviews. However after trying at least 10 of the recipes, I am totally in love with this book. Every recipe has turned out astonishingly delicious (and attractive). I have a great deal of confidence in my breadmaking skills thanks to this book and my goal is to try everyone of the recipes. For anyone who is discouraged by the prescriptions for only certain brands of flour, I will say that WheatMontana unbleached all purpose flour has substituted perfectly & I plan on trying the Montana Flour brand also. Thank you Rose for showing me how to make divine bread!
Book Review: great gift, great tutorial Summary: 5 Stars
I bought this book as a Christmas gift for my husband who loves bread and likes to learn how to make things "the old fashioned way". The book gives very thorough instructions. His first loaf, though it took a whole day with multiple risings and a lot of patience, turned out beautifully and delicious! I like that it includes multiple units of measurements and the best part is that it tells the reader how to mix the bread with both a stand mixer or by hand.
The recipes are extensive, so there is something for everyone.
It's for someone who wants to take time and learn about the art of bread baking. I'd almost call it a textbook.
Book Review: The Bread Bible by Rose Levy Beranbaum Summary: 5 Stars
I Love this Book!! Rose Levy Beranbaum spares no details from start to finish in helping the novice or even the intermediate bread baker to be successful in their baking efforts. The products she recommends for successful bread baking are right on target, right down to the inexpensive scale for weighing and measuring the correct amounts of flour and liquids. My first loaf, using her recipes, was just as good as my subsequent loaves, due to her recommendations for how to produce consistent and beautiful loaves of bread, every time! When my daughters express an interest in bread baking, this will be the book I will pass on to them . . . Thank you, Rose!
Book Review: Disappointed Summary: 2 Stars
As a seasoned bread baker, I am disappointed that a 640-page bread cookbook contains only two whole grain recipes. She could have at least included a section on whole-grain, but one has the impression that Beranbaum doesn't like the taste of whole-grain. Her methods are good, but, considering that part of the reason to make a sponge is to soften the whole-wheat flour, it surprised me that her sponge-based recipes do not contain any. This is a good cookbook if you want to learn the sponge method of bread baking, but as a source for a variety of bread recipes, I wish I had purchased a different one.
Book Review: take it either way Summary: 5 Stars
My mother is of course an experienced baker, but cook books have until recently been written by mindless court reporters typing away to a rythemless drummer. In my attempts to follow my mom's example I couldn't have had a better cook book too rely on. I'm very thankful for Rose's narrative, as it was my guide and my judge in this venture. Successful baking has to have some failures. The extrememly long directions for the recipes are now like a favorite memorey, the results justiy the work. If a big fancy cook book for making, thinking and lusting for bread is on your list, this one will do fine.
