This has always been an excellent book but difficult to get in Europe - Amazon has saved me having to nip over to the US to buy this latest version - which is even better than previous editions.
For any cook who wants to know real detail, alternative names etc - this is a must!

This book contains a vast amount of information that is easy to find. When I'm working in the kitchen it's nice to have this on hand for a quick reference. I also read it casually to expand my knowledge. Wonderful book, much easier than running to the computer to look something up.Book Review: LOVE IT!!

for the most part anything you need to know it has in there for you to inform your self!! I just wish there was a Portuguese/English version. this was the first book that was recommended to me when I started culinary school and the first one I ended up by buying!!
