This book is everything any Chef serious cook or an aspiring chef needs to know. It is the foundation of all cooking techniques and a study of ingredients. The greats use it an refer to it over the years. Every executive chef I ever worked for owned it as well as me. I bought this book after purchasing a book for my son who is learning to cook. It was so informative and user friendly I had to have a copy for myself. It begins with the basics and is extremely informative. This book will be a family heirloom going from one generation to another. This book is visually exciting, well organized, great glossary, and indexed (two indexes: Subject and Recipe). It has gone beyond my expectation with needed information and learning. Excellent book. I don't get to cook often, but I love it and the science behind it. This book is everything and more you would every need to know for any cooking endeavor. Yes, it is very technically oriented, and the measurements are in awkward amounts, but the awe-inspiring content and recipes makes it a worth-while investment.
