Book Reviews of The Professional ChefBook Review: Worth it if you need it. Summary: 5 Stars
I'm loving this book. I got the older version because it was cheaper, but its still very useful. Mirepoix is still mirepoix. That said, you don't need this as a home cook. Only buy this book if you are serious about cooking or about learning cooking (and you are already somewhat good at it). Otherwise you'll find it excessive.

My husband is a chef, and i bought this for him for X-Mas, he loves the book and reads it all the time. Its everything you need. The price is also excellent. It usually retails at any bookstore for $70.00, so getting it for under $45.00 was such a bargain. I recommend it for all chefs or just anyone who truly loves to cook.

Excellent book not only gives procedure but includes some excellent recipes. The professional chef is written for the professional or very advanced cook. Covers all aspects of the profession. Precisely written with beautiful photographs. The Culinary Institute of America has once again produced a wonderful reference tool.
Book Review: The Professional Chef, 8th edition Summary: 4 Stars
The book is easy reading and gives a good overview of the principles of cooking. For a more detail book you may would to consider Professional Cooking. I bought both and enjoyed both. Professional Cooking tends to be more "Dick and Jane" while The Professional Chef assumes you bring some cooking intelligences with you.
Book Review: Not Just For the Professional Summary: 5 Stars
I'm not a professional chef but I do love to cook. After reading the reviews, ordered a copy for myself and am very glad I did. Full of tips and techniques that even home chefs can use. Receipes are geared toward large (restaurant) portions so you can either cut in half or just freeze the leftovers. A+.
