I recently purchased the Professional Chef, 8th Edition which I had intended to by for some time. It is exceptional. I just returned from a trip to St. Helena, CA were I actually visited the C.I.A. at Greystone and I would recommend this trip to everyone interested in fine cuisine.Book Review: Amazing Reference

The CIA Pro Chef 8th Edition is absolutely a must if you are an aspiring cook. I have the 7th Edition, which is superb, and the 8th has added, refined, and updated to perfection. For a study text book in the culinary arts, this is the greatest!
