This is a wonderful book. I bought it because of my interest in Sous Vide cooking. I got
more than I bargained for. This book also gives you a birds eye look at a haute cuisine
kitchen and staff. Beautifully illustrated. Sumptuous really. Well written and with great
style. Thoroughly enjoyable !!

You need the equipment - not cheap and easy
But some great techniques and recipes as always
time/tempeature variables provided which is fantastic
only drawback for me the use of this chemical meat-glue, Keller claims it is natural
but it smells too much the lab for me, otherwise 5 stars

This book is fantastic. Not at all for the home chef, but so what! For professionals, there are so many levels on which to you will enjoy this book. If you are an enthusiastic amateur, this is a great window into the standards and techniques of many of the world's best restaurant. THIS IS A MUST BUY!

I bought this book for my husband, who is a chef, for Christmas. He LOVES this book. It is beautifully photographed and very informative. His restaurant just recently bought a sous vide machine so he was anxious to get some ideas. I would definitely recommend this book for the professional chef.
Book Review: Amazing! Summary: 5 Stars
I'm a manager at a 4 Diamond restaurant in Florida and this book is incredible. It has some great ideas and the pictures and recipes really make it easy to turn them into things you can use. I gave it to my chefs for Christmas and they immediately started trying things out. Highly recommended!
