I love books like this that aren't just recipes but explain the context and the reasoning behind the ingredients. This helps to understand not only the recipe but the culture behind it and the foods that make those cultures so great. There's very helpful information on how to get vegan protein into your diet and how to try that protein in different ways. Very yummy. There's a lot of well-researched writing in this book.
