WeightWatchers in 20 minutes by Wiley Publishing, Inc. includes 250 recipes that are healthy for you, absolutely delicious and quick to prepare. It is conveniently indexed alphabetically and by point value. The recipes represent American as well as International flavors including Cajun, Asian, Mexican, Italian, and Indian. Here are some of my favorites:
Breakfast:
Fruit and Cheese-Stuffed French Toast made light with Neufchåtel Cheese, whole wheat bread, real fruit and fat-free milk. Six points per serving. Other favorites for breakfast include: Mango-honey Breakfast Cooler or Crab and Chive Frittata (both 3 points/serving).
Lunch
Sante-Fe-Style Roasted Chicken Salad (4 points/1 cup)
Shrimp and Papaya Salad with Honey Lime Dressing (4 points/2 cups)
Turkey, Apple and Honey-Mustard Wraps made with golden delicious apples, reduced-fat flour tortillas and Jarlsberg cheese. (7 points/wrap)
Tomato Basil Soup uses a variety of vegetables plus tomatoes and is sprinkled with Swiss cheese. (2 points for 1-3/4 cup serving)
Main Dishes
My favorite: Pork Chops with Corn-Bell Pepper Relish. (5 points for 1-1/2 cups)
Sloppy Joes Tex-Mex Style is made with ground chicken instead of beef (6 points per serving).
Salmon Cakes with Red Pepper Mayonnaise is another favorite. Absolutely delicious gourmet food! (4 points for 1 cake and 2 Tbs. Sauce).
Ham-wrapped Flounder with Spinach Stuffing (4 points/serving)
Shrimp with Bok Choy and Baby Corn (6 points/serving). I never had Bok Choy before, but now it's a must for my grocery list.
Meatless Dishes
Double Cheese and Macaroni - made with reduced fat cheddar and Monterry Jack cheese. How can it be possible that we can eat 1-1/2 cups for only 6 points? The trick is a can of special ingredients!
Couscous and Vegetable-Stuffed Tomatos (3 points/tomato)
Unlike most cookbooks, this one is not filled with desserts and pastries; however, there are a few special treats such as Double Chocolate-Cranberry Pudding which uses real sugar and is still only 5 points per ¾ cup serving and Peach-Strawberry Milkshake at 3 points per cup.
The last chapter includes two-for-one recipes. Make a meal for one night and plan to use the leftovers for a second night. For example: Chili Rubbed Flank Steak with BBQ Onions (5 points/serving) is used the 2nd night for Beef and Bean Soft Tacos (6 points/taco).
The only problem with this cookbook is that you will have to plan and shop ahead as many of the recipes use ingredients not normally kept in your refrigerator such as Bok Choy or cranberry juice cocktail. But that's what makes this cookbook special. It's a collection of delicious, easy-to-make, unique dishes for family dinners or for special occasions.
It makes being a WeightWatcher® fun!
