Book Reviews of White Trash Cooking (Jargon)

Book Review: More than a cookbook
Summary: 5 Stars

This is a cookbook full of simple down-home recipes and a healthy helping of tongue-in-cheek humor. Any bachelor like me will appreciate that most of the recipes call for just a few common ingredients.

As I read through it, I got the feeling that I was standing beside the stove, being taught how to cook in a *real* way - not as a gourmet wannabe following a recipe. If you don't put in enough flour, "they'll come out like thin wafers... just as delicious, but won't make enough for Christmas."

It has a great mix of "from-scratch" dishes, but isn't afraid of canned products or even Bisquick. No taboos or "authentic" dogma here, unless you mean how many crackers go in a "Ritz Pie" (exactly 23 or it will be ruined!) The phrase "tastes just like the real thing" appears just frequently enough to keep the snobs away.

Expect some sage wisdom like:
* How to make canned veggies taste almost like home-canned.
* The best potato masher is a quart fruit jar.
* celery seed is the secret to deviled eggs.

Favorite quote:
"You can make a casserole out of anything. Throw your leftovers in an oven dish and mix with whatever you think will stick them together, an egg or some cheese maybe. Then bake til done."

This is probably the only cookbook in the world that calls for a hatchet. How else would you open a cooter (snapping turtle)? And yes, it has the obligatory recipes for possum with some very good advice: "After you kill the possum be careful not to let him get away."

But, the fun recipes and quotes are outweighed by the real, Americana southern-style fare. After getting in the mood by looking at the "artistic" photos in the middle, even the outlandish dishes may seem strangely familiar and tempting.

So put on that wife beater, throw a can of silver bullet in your back pocket and don't be afraid of an iron skillet. As for me, it's been way too long since I've had black-eyed peas and fresh-fried corn pone.

Summary of White Trash Cooking (Jargon)

This is not a joke book or a parody. This is a warmly written, humorous, and quite serious cookbook filled with delightful traditional and unusual recipes. It includes wonderful photographs by the author of people and places and food all connected to his fondness and memory of growing up in rural and small town Mississippi. You may not be tempted to try every single recipe in this book, but you won't be able to resist trying many of them!
